Chocolate, Peanut Butter & Banana Smoothie!

Another really easy and healthy breakfast smoothie I've been enjoying.


 In this smoothie I blend together: banana, cocoa powder, yogurt, peanut butter, oats, chia seeds, a little honey and spinach. Add water or milk along the way to get to your desired consistency.


And there it is...my yummy (somewhat more indulgent than my usual) chocolate banana smoothie. It's still pretty healthy though, with the spinach and chia seeds. I also always use my own homemade yogurt so I know that's healthy as well... and Daphne LOVES it!















Quick tip: I froze my banana (peeled) overnight and that helped this smoothie be closer to a milkshake texture....yum.

Chocolate Banana Porridge

Sometimes on a cold an snowy day there is nothing more than a hot bowl of porridge to get the day started right. 


I decided to try something a little different this morning: chocolate, banana, cinnamon and honey.



It was really really good. It's hard for me to type this but it may have been just a bit too chocolaty. I used a heaped tablespoon for one serving but I probably only needed a teaspoon.


Hubz and Daphne also really liked it...which is great cause it was fast and cheap...my two favorite things.

Oatmeal and Banana Breakfast Bars

I found this recipe online for a really easy no bake breakfast bar and in my house the faster a recipe takes the better. This one took about 4 minutes of prep time and 40 minutes in the freezer.

For this batch I used approx. 1.5 cups quick oats, .5 cup peanut butter, 2 ripe bananas, 2 pinches of flour and chocolate chips. Blended in the stand mixer and pressed into a lasagna pan. 


I froze it in the pan until it was solid enough to cut and then stored them in the fridge. I enjoyed how quick and easy they were. 



It was agreed that they should have a little more peanut butter in them. They would also taste great with nuts or dried fruits. I think I will have some fun experimenting with the recipe...and I'm sure my husband wont have any issues "testing" my creations.

Hummingbird Cake

I made this for my hubs 30th birthday. I used a recipe from allrecipes.com but I modified it, of course. Heaven forbid I make a recipe as written. The best part of this cake is that is can double as breakfast…there is banana in it…is that a stretch? No?

What you’ll need:

-          3 cups flour
-          1 teaspoon baking soda
-          1 teaspoon salt
-          1 teaspoon (overflowing) cinnamon
-          2 cups sugar



Mix all of this together in a big bowl.


In a separate bowl mix:

-          3 large eggs
-          1 cup vegetable oil
-          1 ½ teaspoons vanilla
-          2/3 cup milk

Stir together.

Mix wet and dry together. Add three chopped banana’s and however many pecans you can afford. Bake in three pans at 350 degrees for 28 minutes (that’s my oven) or until a toothpick comes out clean. I completely omitted the traditional pineapple from this dessert because I just don’t like it. Bleck.

I frosted this mother with a cream cheese, butter and icing sugar frosting.

It was delish! Although there was so much of we ended up bringing some to my mom and dads for them to enjoy.
