Be confident. Make sure your knives and poultry scissors are sharp.
Put a damp towel under your cutting board to avoid slippage.
I made this the other night .
Drizzle with oil. Sprinkle salt and pepper and dried thyme and oregano.
Roast @ 425 for about 45 mins.
As always check with your meat thermometer.
I served it with mashed butternut squash, granny smith apples, and of course garlic.
